1Heat olive oil in a large saucepan over medium-high heat; saute onion and garlic until onion becomes translucent, about 5 minutes. Add tomato sauce, tomatoes, mushrooms, bell pepper, celery, carrots, zucchini, tomato paste, cooking wine, soy sauce, and black pepper; simmer for 2 hours.
2Stir basil, oregano, sage, and bay leaves into sauce and simmer until flavors blend, 1 to 2 hours. Remove bay leaves.
