Steel Cut Oats with Blueberries and Lemon Zest Recipe

"Easy, vegan, healthy. This is also great with orange zest and dried cranberries. Add walnuts or almonds for some crunch. You can substitute almond milk or soy milk for the coconut milk, if desired."
1Stir coconut milk, oats, chia seeds, lemon zest, and vanilla extract together in a bowl. Cover the bowl with plastic wrap and refrigerate, 8 hours to overnight.
2Heat oats mixture in the microwave until warmed-through, about 1 minute. Top with blueberries.
